Toolum is a traditional candy of Trinidad tribe. The texture is similiar to caramel candy, but it has stronger flavour due to the presence of molases. The main ingredient of Toolum is coconut.

Serving portion :   4 cups
Ready in :   1 hour

Ingredients:

1 cup Coconut sugar
1 tbsp Water
1½ cups Grated coconut
¼ cup Molase
1½ tsp Dried orange peel
1½ tsp Grated ginger
½ cup Granulated sugar

Directions:

  1. Mix coconut sugar and water in a pan and heat over medium heat. Stir until the sugar melt and boil or until the colour turns into reddishh-brown colour, approximately 8-10 minutes.
  2. Add grated coconut to the caramel sugar and stir. Then, add molase and stir well.
  3. Add dried orange peel and grated ginger to the mixture and stir well. Cook over low heat for 3-4 minutes or until the mixture thickened.
  4. Spread the baking dish with butter. Take small amount of mixture and roll into a ball. Continue with the rest of the mixture, place the toolum balls on the baking dish with 2 cm space between each ball. Let it cool down for a few minutes.
  5. Put the granulated sugar in a small bowl. Take the toolum balls and dip the balls in the granulated sugar. Toolum can be stored for 2 weeks in an airtight container.
