Cashew-Coconut Snack Bar

A unique snack bar made from cashews and coconut. Because of its coconut content, this snack bar is high in dietary fiber that is good for our digestive system.

Serving portion :   16 bars
Ready in :   20 minutes

Ingredients:

80 ml Honey
30 gram Rice flour
1 tbsp Almond butter/ peanut butter/ unsalted butter
½ tsp Vanilla extract
200 gram Crushed cashews
75 gram Seedless dates
60 gram Grated coconut
90 gram Oatmeal
1 tbsp Black sesame seed
¼ tsp Salt

Directions:

  1. Preheat oven to 150°C. Put the baking paper on the 20x20 cm baking dish.
  2. Mix the honey, rice flour, and vanilla in a medium mixing bowl and stir with spatula. Pour other ingredients into the mixing bowl and stir well. Compact the mixture into the baking dish.
  3. Bake the mixture for 20 minutes. Let it cool down for 1 hour. Store in the fridge for another hour.
  4. Slice the bar as desired and wrap it using plastic or baking paper one by one. The snack bar is ready to be served or can be stored in the fridge.
